  • 4 cups white spelt flour plus extra for kneading
  • 3 ½ teaspoons kosher salt
  • 1 ½ teaspoons baking soda
  • 1 tablespoon honey
  • 1 onion, finely chopped
  • 1 tablespoon poppy seeds
  • 1 tablespoon + 1 teaspoon vegetable oil
  • 1 egg
  • ¼ cup oatmeal or corn meal
  • baking sheet lined with parchment paper

  • 1 lb smoked salmon (nova or lox)
  • 1 large cucumber
  • 2 tubs cream cheese (vegan or regular)
  • 1 cup fresh sprouts
  • 3 large tomatoes
