Annie Hall: A New York Deli Dinner Party
New York Spelt Bagel Sandwich
I think it is safe to say that 99.9% of all humans, given they have tasted a bagel in their life, love them. Wow your friends with this bagel recipe and you can eat bagels for every meal! You can have a bagel with eggs for breakfast, a bagel sandwich for lunch AND pizza bagel for dinner!!!
First combine the warm water, the yeast, and the sugar. Let the mixture sit for a few minutes. Once it begins to bubble, add half of the flour and 1 tbsp oil.
Next, add the rest of the flour and 1 ½ tsp salt. Knead the dough for about 10 minutes. Make sure to add extra flour as needed on the table and your hands to keep the dough from sticking. You will know you have kneaded the dough enough when it is no longer sticky. If you are using a stand mixer, mix the dough on medium for about 10 minutes.
Once the dough is ready, cut it into 8 even pieces. Roll the pieces into balls and cover with a damp paper towel. Let the dough sit for 15 minutes.
Boil a large pot of water with the baking soda, remaining salt and honey, and pre-heat the oven to 425 degrees.
Take each dough ball and roll your fingers in the middle of the ball so that it becomes a dumbbell shape. Then put the thinner, middle part of the dough on the top of your knuckles and roll the thick part of the dough in your palm to create the ring shape. (This part can be tricky…don’t give up! You’ll get it!)
Prepare a baking sheet by putting a piece of parchment paper on it. Lightly sprinkle oatmeal or cornmeal on the parchment paper to keep the dough from sticking.
Combine your chopped onion with the poppy seeds and remaining oil in a small bowl. Set aside to use later.
Once your pot of water is boiling, drop in half of the dough rings. At first they will sink into the water, but when they rise to the top let them boil for about 20 seconds, flip them over, and then boil them on the other side for about 20 seconds. Promptly remove them from the water and put them on the baking sheet.
Repeat with the second half of your dough rings.
Once both batches have been boiled, you’re ready to crack open your egg! Whisk the egg, and brush the bagels with the egg. Then sprinkle the onion mixture on top and put the bagels in the oven to bake.
Bake the bagels for 20 minutes or until golden brown. Let them cool before serving and eating.
Once the bagels have cooled you can cut them in half and create your bagel sandwich using the ingredients above. Simply slice up the cucumber and tomato, wash the sprouts and assemble! Mmmmmmm!
