Ingredients

Sweet Tomato Chutney
  • 1 head garlic, peeled and coarsely chopped
  • 1 piece fresh ginger, about 2 inches long, peeled and coarsely chopped
  • 1 1/2 cups red wine vinegar
  • 1 (28 ounce) can whole tomatoes
  • 1 1/2 cups sugar
  • 1 1/2 teaspoons salt
  • 1/4 teaspoon cayenne pepper
  • 2 tablespoons blanched slivered almonds
Cilantro Mint Chutney
  • 1 bunch fresh mint, only the leaves
  • 1 bunch fresh cilantro, only the leaves
  • 5 garlic cloves, peeled and coarsely chopped
  • 1 inch piece of ginger, peeled and coarsely chopped
  • 1 green serrano chili, coarsely chopped (seeds removed for a milder sauce)
  • 1 teaspoon sugar
  • ½ teaspoon salt
  • juice of one lime
  • ¾ cup water
