Dick Whitman’s Deviled Eggs
We’ve made the Deviled Egg a bit healthier in this recipe by swapping out the mayo for avocado! The avocado is just as creamy, equally delicious, and much better for you. Why Dick Whitman’s Deviled Eggs you ask? Because we think a Jon Hamm is devilishly handsome.
Place eggs in a pot and cover with water. Cook over a high heat for 9 minutes. Run eggs under cold water and peel. Slice each egg in half lengthwise and place all of the yolks in a mixing bowl. Add the olive oil, chives, mustard, lemon juice, avocado, tarragon, Tabasco and salt to the egg yolks. Mix together until rich and creamy. Place egg yolk mixture into a zip lock bag and cut off one of the bag tips. Pipe the egg yolk mixture into each empty egg white cavity and sprinkle with paprika.
- 6 eggs
- 3 tablespoons olive oil
- 1 tablespoon chopped fresh chives
- 2 teaspoons French’s mustard
- 1 ½ teaspoons fresh lemon juice
- 1/2 fresh avocado
- 1/2 teaspoon fresh chopped tarragon
- 3 dashes of Tabasco sauce
- 1/8 teaspoon salt
