Peggy’s Pineapple Upside Down Cake!

Preheat oven to 375. Heat a pan over the cook top and add the butter and brown sugar. Stir until the two turn into a caramel that doesn’t run.
In a large bowl combine the eggs, vanilla, dark rum, pineapple juice, vegetable oil, cinnamon and nutmeg. Whisk until well combined and then add the vanilla cake mix little by little.
Place the caramel on the bottom of your baking pan and place a layer of the pineapple on the caramel, then cover with the batter.
Cook for 40 minutes, or until cooked through.
Turn over onto a plate and fill the pineapple centers with maraschino cherries!

- 1 can sliced pineapple
- 1 bag Pamela’s Gluten Free Vanilla Cake Mix
- 3 eggs (beaten)
- 1 teaspoon vanilla
- 1 tablespoon dark rum
- 2/3 cup minus 1 tablespoon pineapple juice
- 1/2 cup vegetable oil
- 1/2 teaspoon cinnamon
- 1/2 teaspoon of fresh grated nutmeg or 1/4 teaspoon dried nutmeg
