Spirited Away: A Bento Box Dinner Party
Bento Box Dinner!
Julianna and I created this delicious bento box recipe that is surprisingly easy! If you don’t have the time to create the entire meal, just pick and choose your favorite parts and cook away!
Soak the chicken breasts in Soy Vay for one hour, and then grill them either in a grill, or on a grill pan!
In a wok, heat some oil and add the onion, next add the ginger and garlic. Then, once that mixture becomes aromatic add all of the veggies, when they are just about cooked throw in the soy sauce. Add more soy sauce or garlic and ginger to taste!
For the salad, chop up lettuce, carrots and cucumbers.
Miso Ginger Carrot Dressing
Put all of the ingredients in the food processor (with the exception of the salt and pepper), and blend until smooth. Then salt and pepper to taste and sprinkle sesame seeds on top for some color!
To Create The Bento Box:
Cook some brown rice (per instructions on label) and get some edamame. Then in the box (or on a plate) place the chicken on top of the brown rice, and put some of your sautéed veggies, edamame and salad on the plate with it. You now have your very own bento box! Enjoy.
- 4 organic chicken breasts
- Soy Vay Teriyaki Sauce
- 1 cup green beans, sliced in 1 inch pieces
- 5 carrots, sliced
- 1 onion, chopped
- 3 cloves garlic, minsed
- ½ inch ginger root, minsed
- 1 head broccoli, chopped
- ½ head cabbage, chopped
- 1 teaspoon soy sauce
- olive oil
- 2 large carrots, finely chopped
- 2 tablespoons fresh ginger root
- 2 tablespoons rice wine vinegar
- 2 tablespoons white miso paste
- 3 teaspoons sesame oil
- 1 tablespoon peanut oil
- 1 tablespoon grape seed oil
- sea salt
- sesame seeds (optional)
