The Dark Knight Rises: Superhero Superfood Snacks!
These cookies are so delicious that we guarantee they will go fast. Because they are so healthy you can eat these cookies at any time of the day! Enjoy one as an afternoon pick me up, a bedtime snack, or on the way to the gym.
Start by pre-heating your oven to 350 degrees. In a food processor blend the walnuts until finely ground. Then add 1 cup of the oats (reserve the other cup) and the spelt flour. In a bowl mix the flour combination with the baking soda, cinnamon and salt.
In a separate bowl combine the coconut oil, maple syrup, almond milk, vanilla and vegetable oil.
Add the dry ingredients to the wet and mix well. Then add the remaining 1 cup of oats, followed by the chocolate pieces.
Bake the cookies on a greased cookie sheet for 8 minutes, or until slightly brown along the edges.
Makes 2 dozen cookies
- 1 cup walnuts, toasted
- 2 cups quick cooking oatmeal
- 1 cup white spelt flour
- 1 teaspoon baking soda
- ½ teaspoon cinnamon
- 2 pinches of salt
- 3 tablespoons coconut oil, room temperature
- 1 cup grade B maple syrup
- 2 tablespoons almond milk
- 1 teaspoon vanilla
- 2 tablespoons vegetable oil
- 1 ½ bar Green & Blacks Cherry Chocolate Bar, chopped into small bites
