Tea Scones and Homemade Jam!
Here is a simple recipe that will surely impress your guests! Even the best of tea scones are nothing without a jam companion, so we’ve given you a yummy jam recipe too! Enjoy!!!
Preheat your oven to 350 degrees.
In a large bowl combine the raisins, flour, sugar, baking powder, salt and vanilla. Chop up the butter (make sure it is cold!!!) into small pieces and incorporate them into the dough. Then add the hot water and kneed the dough until it is firm enough to roll out and to cut into biscuit shape.
Bake for 14 minutes and serve hot or wrap them up and save them for later!
Makes about 8 scones
Berry Baked Jam
Pre-heat oven to 350 degrees.
Mix all of the ingredients together in an oven safe casserole dish, and bake the berries until they become soupy. Then decrease the temperature to 325 degrees and continue to bake for an hour and a half, stirring every 20 minutes.
To test if the jam is done, freeze a small plate and put a bit of jam on it. When you can run your fingertip through the cool jam and it doesn’t immediately run back together, your jam is done.
Refrigerate for up to a week.
- 1 ½ cup spelt flour
- handful of raisins
- ¼ cup sugar
- 2 ¼ teaspoon baking powder
- 1 teaspoon salt
- 1 teaspoon vanilla
- 3 ½ tablespoon butter
- 1/3 cup hot water
- 1 1/2 cup frozen thawed mixed berries
- ¼ cup sugar
- 2 teaspoons lemons juice
