  • ½ onion, chopped
  • ½ jalapeno, diced
  • 1 ear of corn, kernels off the cob
  • 1 ½ cups cornmeal
  • ½ cup unbleached white flour
  • 1 ½ teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup milk (we used soymilk)
  • ¼ cup honey
  • 2 eggs
  • 4 tablespoons salted butter
  • olive oil
  • 10 inch skillet
